This chapter focuses on dietary and overall nutritional changes based on a broad historical perspective. Stages or patterns of nutrition transition are outlined and discussed. Increased dietary diversity and a shift in the structure of the diet toward more added sugar and fats and a change of staples are highlighted. The contribution of urbanization and the effect of income on dietary changes are examined. Immediate access to mass media may also explain these changes.
